I plan to take Part 1 and 2 of the C+ class. Is this a good place to start, will it give me enough info to understand the Mac OS X and start developing?

The focus of iPhone development (like OS X development) is Objective-C. While based on the C programming language, it adds a large chunk of object-oriented techniques borrowed from Smalltalk.
While fundamental C programming is helpful, I don't think it would be as useful as some OS-X / Objective-C oriented training.
Try Stephen Kochen's book Programming in Objective-C and his update to it later this year for Objective-C 2. I am just learning to program and everyone told me that this was the best book for OSX based platforms. And from my experience it is really easy to understand, I can't wait for his updated version.
That's a good source but if you are brand new to programming I still recomend the book-it goes into more detail on the reason behind what you are doing to help you understand the process quicker
